Low Carb Ground Beef and Cheese Salad
This is a very quick and easy recipe that is low enough in carbohydrates so that people who are on a low carb diet such as Dr. Atkins or South Beach may be able to include it, depending on which level they are on. There are 7 grams of carbs per serving. The recipe below is for a single serving. Obviously, you can double the quantities to serve two. Kids do not need to be told that this is a low carbohydrate meal. They will probably call it a cheeseburger salad, or a cheeseburger without the bun.
Ingredients:
- 3 ounces of lean ground beef
- 4 slices of bacon
- 1 cup chopped lettuce
- 1/8 cup chopped onion
- 1/2 medium tomato, chopped
- 1 tablespoon mayonnaise
- 1/4 cup cheddar cheese, grated or diced small
- 1 tablespoon chili powder
Method:
Crumble ground beef into a non-stick frying pan and cook, stirring until completely cooked. Add chili powder about halfway through the cooking process. Remove from pan, draining off any fat and allow to cool.
Meanwhile, in the same pan, cook the bacon, and then drain and crumble it.
In a medium sized bowl, combine lettuce, onion and tomato. Add mayonnaise and stir until blended. Add beef, bacon and cheese.
Serves 1.
