Easy, one-skillet, ground beef macaroni minestrone
Here is a very easy but wonderfully toothsome recipe we recently found on Yahoo Answers for Minestrone Macaroni. It can be ready to serve in less than half an hour, and is a perfect answer to the frequently asked question of what will the family like that is good for them, inexpensive to make and doesn’t take a lot of work to put onto the table.

1 pound ground beef
2 cans (14-1/2 oz.) diced (I prefer Italian) tomatoes, undrained
2-1/4 cups water
1-1/2 cups uncooked elbow macaroni
2 beef bouillon cubes
1 can (16 oz.) kidney beans (or pinto or navy beans) rinsed and drained
1 can (15 oz.) garbanzo beans, rinsed and drained
1 can (14-1/2 oz.) cut green beans, rinsed and drained
1 cup frozen peas and carrots
1 cup frozen lima beans
In a large skillet, cook beef over medium heat until no longer pink; drain. Add tomatoes, water, macaroni and bouillon; bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until macaroni is tender. Stir in beans and vegetables and heat through.
