Stuffed Zucchini Bake is a very easy to make recipe and there are only 35 grams of total carbs per serving, so if you are on a low carbohydrate meal plan such as Dr. Atkins, or South Beach, then this is a meal recipe that you may very well consider adding, depending on which level of the diet you are on.

Ingredients:
4 medium zucchini — washed and and cut in half lengthwise
1 pound ground beef
1 clove garlic — minced fine or pressed
1/2 cup onion — diced

1/2 cup mushroom — diced
1/2 cup parmesan cheese  or cheddar, your choice
1 each salt and pepper — to taste
Method:
Preheat oven to 350 degrees F. Spray a cookie sheet or casserole with cooking spray.

Use a spoon and hollow out the zucchini to make “boats”.  Leave the skin and about 1/4 inch or so of pulp on the shell.

Remove the pulp and chop it coarsely.
In a skillet, add ground beef, onion, garlic, mushrooms and zucchini pulp. Cook through, stiring
to break up meat.  Lay the zucchini boats in prepared pan and spoon meat filling into them.

Bake, covered, for 20 minutes.

Uncover and sprinkle with cheese and continue baking until the cheese has melted.
