Just when you thought there was nothing new you could cook with ground beef that was fast, easy and delicious, here is a great recipe (plus a few bonus recipes thrown in for good measure. Enjoy!

Ground Beef and Tater Tots Casserole

Brown the ground beef and add onions if you wish. In a casserole dish that has been sprayed with non-stick coating, spread the beef evenly. Layer on a can of cream of mushroom soup (or two depending on the size of the dish) and top with tater tots. Bake according to the directions on the tater tot package. Of course you could always sprinkle some grated cheese on top for the final 5 minutes or so.

Kids love this and it’s quick and simple.

Or if you want to get a tiny bit more complicated, why not try:

Sour Cream Noodle Bake

8 oz of Egg Noodles (any pasta will do though)
ground beef
1 jar spaghetti sauce
12 oz each of sour cream and cottage cheese
Shredded cheddar cheese

Brown the beef and add onion if you want. Drain and add the spaghetti sauce. While that simmers, cook your pasta until tender. In a casserole dish, place a tiny bit of the sauce just to cover the bottom of the dish. Mix together the sour cream, cottage cheese and cooked noodles. Start layering. I usually have two layers of noodles and sauce, ending with the sauce. Sprinkly the shredded cheddar on top and bake at 350 until the cheese on top is bubbly and slightly browned.

Goes really well with garlic bread and a salad.

Easy Shepherd’s Pie Recipe

1 1/2 pounds ground round beef
1 onion chopped
1-2 cups vegetables - chopped carrots, corn, peas
1 1/2 - 2 pounds potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice

Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.

Sauté onions in butter until tender over medium heat (10 minutes). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.

Add ground beef and sauté until no longer pink. Add salt and pepper. Add Worcestershire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.

Mash potatoes in bowl with remainder of butter, season to taste.

Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.
